Flourless orange and almond cake with chocolate ganache

A naturally flourless orange and almond cake made with whole clementines and orange, ground almonds and fine polenta for a deeply moist, fragrant crumb. Slow-baked to intensify the citrus oils, then finished with a smooth dark chocolate ganache made from rich 70.5% chocolate.
